Love to eat and always have. I used to eat anything and everything. A few years ago, I had serious stomach issues but I was able to avoid surgery by sticking to a plant-based diet. All the pain went away, my hair and skin look healthier than ever before, and I have more energy. The best part is- I don’t feel deprived. I am not missing out on all the food I used to love because I am filling my plate with foods that are delicious, packed with nutrients, and very filling.
WE LOVE OUR FOOD
I really enjoy cooking for friends and family, especially since we enjoy eating and really appreciate tasty food. My goal is to share all the health benefits I have found with a plant-based diet, by making recipes that are filling and delicious, without the animal products. My friend who eats meat or dairy at every meal said. “If I could eat at your house every night, I would be vegan.” This nice compliment made me realize that if the food tastes amazing, people don’t care whether it’s plant or animal based.
I am going to try new (easy) recipes every week that use combinations of whole foods, without the animal products. I will test the recipes on my friends and family, and if they love them then I think you will too.
MEAL TIME- FALAFEL PITA POCKETS
I just bought a new cookbook by Chef Chloeand decided to try as many of the recipes as I can, which look easy to make. I made falafel pita pockets for some friends and they were a huge hit. You can also make these into falafel sliders, which is what the original recipe calls for (pictured below). The recipe also calls for homemade hummus and tahini, but store bought hummus and/or tahini will do the trick.

Combine in food processor or blender:
- 1 15 ounce can chickpeas
- 1/2 red onion
- two cloves garlic
- 5 sun-dried tomatoes
- 1/2 cup parsley
- 1 teaspoon cummin
- 1 teaspoon coriander
- 1/2 cup flour
- 2 tablespoon olive oil
Saute:
- Form mixture into patties and saute in olive oil for 3 minutes each side

Chop:
-tomato, red onion, avocado

Stuff:
Put all mixture in the pita and top with tahini and/or hummus.
